Instructions

  1. Preheat oven to 425°F (220°C). Toss sweet potato fries with 1 tablespoon olive oil and 1/4 teaspoon salt on a baking sheet. Roast for 15-20 minutes, flipping halfway, until crispy and tender.
  2. While fries cook, prepare the black bean burgers. In a large bowl, mash the rinsed and drained black beans with a fork until mostly smooth but still with some texture. Add the breadcrumbs, finely diced yellow onion, minced garlic, chili powder, ground cumin, 1/2 teaspoon salt, and black pepper. Mix well to combine.
  3. Divide the mixture into 6 equal portions and form them into patties, about 3/4-inch thick.
  4. Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Cook the black bean burgers for 4-5 minutes per side, until browned and heated through.
  5. Serve the zesty black bean burgers on whole wheat burger buns with roasted sweet potato fries and your favorite toppings like ketchup, mustard, lettuce, and tomato slices.

Notes

For a gluten-free option, use gluten-free breadcrumbs and gluten-free buns. The burgers can be made ahead and reheated gently.
