Instructions
- Preheat oven to 425°F (220°C). Toss sweet potato fries with 1 tablespoon olive oil and 1/4 teaspoon salt on a baking sheet. Roast for 15-20 minutes, flipping halfway, until crispy and tender.
- While fries cook, prepare the black bean burgers. In a large bowl, mash the rinsed and drained black beans with a fork until mostly smooth but still with some texture. Add the breadcrumbs, finely diced yellow onion, minced garlic, chili powder, ground cumin, 1/2 teaspoon salt, and black pepper. Mix well to combine.
- Divide the mixture into 6 equal portions and form them into patties, about 3/4-inch thick.
- Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Cook the black bean burgers for 4-5 minutes per side, until browned and heated through.
- Serve the zesty black bean burgers on whole wheat burger buns with roasted sweet potato fries and your favorite toppings like ketchup, mustard, lettuce, and tomato slices.
