Ingredients
- 2 can black beans (15 ounces each, rinsed and drained)
- 0.5 cup breadcrumbs
- 0.5 yellow onion (medium, finely diced)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 0.75 teaspoon salt (for fries)
- 0.25 teaspoon black pepper
- 2 tablespoon vegetable oil (for cooking burgers)
- 6 whole wheat burger buns
- 2 sweet potatoes (large, cut into fries)
- 1 tablespoon olive oil (for fries)
- 0.25 cup ketchup (for serving)
- 0.25 cup mustard (for serving)
- 0.5 head lettuce (for serving)
- 1 tomato slices (sliced, for serving)
Instructions
- Preheat oven to 425°F (220°C). Toss sweet potato fries with 1 tablespoon olive oil and 1/4 teaspoon salt on a baking sheet. Roast for 15-20 minutes, flipping halfway, until crispy and tender.
- While fries cook, prepare the black bean burgers. In a large bowl, mash the rinsed and drained black beans with a fork until mostly smooth but still with some texture. Add the breadcrumbs, finely diced yellow onion, minced garlic, chili powder, ground cumin, 1/2 teaspoon salt, and black pepper. Mix well to combine.
- Divide the mixture into 6 equal portions and form them into patties, about 3/4-inch thick.
- Heat 2 tablespoons vegetable oil in a large skillet over medium heat. Cook the black bean burgers for 4-5 minutes per side, until browned and heated through.
- Serve the zesty black bean burgers on whole wheat burger buns with roasted sweet potato fries and your favorite toppings like ketchup, mustard, lettuce, and tomato slices.
Notes
For a gluten-free option, use gluten-free breadcrumbs and gluten-free buns. The burgers can be made ahead and reheated gently.
