Ingredients
- 2 black bean burgers (store-bought, approx. 100g each)
- 2 whole wheat burger buns
- 1 tablespoon olive oil
- 1 sweet potato (large, scrubbed)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup plain Greek yogurt
- 0.25 cup salsa
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut the sweet potato into fry-sized sticks. In a medium bowl, toss the sweet potato fries with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated. Spread them in a single layer on the prepared baking sheet.
- Bake for 18-20 minutes, flipping halfway through, until the sweet potato fries are tender and slightly crispy.
- While the fries bake, cook the black bean burgers according to package directions. This can be pan-fried, baked, or grilled.
- Lightly toast the whole wheat burger buns. Assemble the burgers with any desired toppings (e.g., plain Greek yogurt, salsa, if using) and serve with the hot sweet potato fries.
