- 2 can black beans (rinsed and drained)
- 0.5 cup breadcrumbs
- 1 egg
- 0.25 cup yellow onion (finely diced)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 2 tablespoon olive oil
- 6 hamburger buns (toasted)
- 1 package coleslaw mix
- 0.25 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 6 ounce tortilla chips
Instructions
- In a large bowl, mash black beans with a fork or potato masher until mostly smooth but still slightly chunky.
- Stir in breadcrumbs, egg, finely diced yellow onion, minced garlic, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined. Form into 6 patties.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Cook black bean patties for 4-5 minutes per side, until golden brown and heated through.
- While burgers cook, prepare the coleslaw. In a separate bowl, whisk together mayonnaise, apple cider vinegar, 1 teaspoon sugar, and 1/4 teaspoon salt. Add coleslaw mix and toss to coat.
- Serve the black bean burgers on toasted hamburger buns, topped with the quick coleslaw. Offer tortilla chips on the side if desired.
Notes
Burgers can be made ahead and reheated gently. Adjust coleslaw dressing to your taste.
