  1. Heat 1 tablespoon olive oil in a small skillet over medium heat. Add finely diced yellow onion and minced garlic; cook for 3-5 minutes until softened. Set aside to cool slightly.
  2. In a large bowl, mash the rinsed black beans with a fork until mostly smooth but still a little chunky.
  3. Add the cooled onion and garlic mixture, beaten egg, whole wheat breadcrumbs, vital wheat gluten, smoked paprika, garlic powder, and cayenne pepper (if using) to the mashed black beans. Season with salt and black pepper. Mix thoroughly until well combined.
  4. Divide the mixture into 4 equal portions and form into patties.
  5. Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Cook the black bean burgers for 4-6 minutes per side, until browned and heated through.
  6. While burgers cook, prepare the coleslaw: In a medium bowl, combine shredded green cabbage and shredded carrot.
  7. In a small bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour dressing over cabbage mixture and toss to coat.
  8. Serve the black bean burgers on whole wheat hamburger buns with the fresh coleslaw on the side.

Notes

You can assemble the burger patties ahead of time and refrigerate them until ready to cook.
