Ingredients
- 5 tablespoon olive oil
- 1 yellow onion (medium, finely chopped)
- 2 clove garlic (minced)
- 2 can black beans (rinsed and drained)
- 0.5 cup dairy-free breadcrumbs
- 1 teaspoon ground cumin
- 0.5 teaspoon chili powder
- 0.5 teaspoon smoked paprika
- 0.75 teaspoon salt
- 0.375 teaspoon black pepper
- 5 whole-wheat burger buns
- 1 pound sweet potato (peeled and cut into fries)
- 4 cup pre-shredded coleslaw mix
- 1 tablespoon lime juice
- 1 teaspoon maple syrup
Instructions
- Preheat oven to 425 degrees F (220 degrees C). Toss sweet potato fries with 2 tablespoons olive oil and 1/4 teaspoon salt on a baking sheet. Bake for 15-20 minutes, flipping halfway through, until crispy.
- While fries are baking, prepare the burgers: In a large bowl, mash black beans with a fork until mostly smooth. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté yellow onion and garlic until softened, about 3-5 minutes.
- Add sautéed onion and garlic to the mashed beans. Stir in dairy-free breadcrumbs, ground cumin, chili powder, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix well and form into 5 patties.
- Heat a clean skillet or griddle over medium heat. Cook black bean patties for 3-4 minutes per side, until browned and heated through.
- Prepare the slaw: In a medium bowl, whisk together 2 tablespoons olive oil, lime juice, maple syrup, and 1/8 teaspoon black pepper. Add the pre-shredded coleslaw mix and toss to combine.
- Serve black bean burgers on whole-wheat buns with sweet potato fries and coleslaw on the side.
