  1. In a large bowl, mash the 2 cans of rinsed and drained black beans with a fork until mostly smooth but still a bit chunky.
  2. Stir in the 0.5 finely diced yellow onion, 2 cloves minced garlic, 1/4 cup vegan breadcrumbs, 1 tablespoon ground cumin, 1 teaspoon chili powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Mix until well combined. Form the mixture into 5 evenly sized patties.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Carefully place the black bean patties in the hot skillet and cook for 5-7 minutes per side, or until heated through and lightly browned.
  4. While burgers cook, in a small bowl, mash the 2 avocados. Stir in the 1/2 teaspoon lime juice and a pinch of salt to taste.
  5. In a separate bowl, combine the 1 head chopped romaine lettuce and 1 cup halved cherry tomatoes. In a small jar or bowl, whisk together the 1/4 cup red wine vinegar, 8 tablespoons olive oil, and 1 teaspoon Dijon mustard until emulsified. Season the vinaigrette with salt and pepper to taste. Pour dressing over the salad and toss gently.
  6. Lightly toast the 5 vegan burger buns if desired. Place a black bean patty on each bun, top with avocado smash, and some of the chopped romaine lettuce. Serve immediately with the side salad.
