Ingredients
- 2 can black beans (rinsed and drained)
- 0.5 yellow onion (finely diced)
- 2 clove garlic (minced)
- 0.25 cup oat flour
- 0.5 cup panko breadcrumbs
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 4 whole wheat burger buns
- 1 package mixed greens salad kit
- 0.25 cup vegan mayonnaise
- 1 tomato (sliced)
- 0.25 red onion (sliced)
- 0.5 cup pickles
Instructions
- In a large bowl, mash black beans with a fork until mostly smooth but still a bit chunky.
- Add yellow onion, garlic, oat flour, panko breadcrumbs, chili powder, ground cumin, smoked paprika, salt, and black pepper to the mashed beans. Mix well until combined.
- Form the mixture into 4 patties.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook patties for 5-7 minutes per side, or until heated through and nicely browned.
- While burgers cook, prepare the mixed greens salad kit according to package directions.
- Toast whole wheat burger buns if desired. Serve burgers on buns with preferred toppings and the prepared salad on the side.
Notes
For best results, allow the burger mixture to chill in the refrigerator for 15 minutes before forming patties, if time allows. This helps them hold their shape better.
