Ingredients
- 2 can black beans (rinsed and drained)
- 0.5 red onion (medium, finely chopped)
- 1 egg (large)
- 0.5 cup breadcrumbs
- 1 tablespoon chili powder
- 1 teaspoon cumin (ground)
- 0.5 teaspoon garlic powder
- 0.75 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 2 tablespoon olive oil
- 5 burger buns
- 1 package french fries (frozen)
- 0.5 head green leaf lettuce (shredded)
- 2 Roma tomatoes (sliced)
- 0.25 cup pickles (sliced)
- 0.5 cup mayonnaise
Instructions
- Preheat oven to 400°F (200°C). Arrange frozen french fries in a single layer on a baking sheet and bake according to package directions, usually 15-20 minutes, or until golden and crisp.
- In a large bowl, mash the rinsed and drained black beans with a fork or potato masher until mostly smooth but still some texture remains.
- Add the finely chopped red onion, large egg, breadcrumbs, chili powder, ground cumin, 1/2 teaspoon garlic powder, 3/4 teaspoon salt, and 1/4 teaspoon ground black pepper to the mashed beans. Mix well until combined.
- Form the mixture into 5 evenly sized patties.
- Heat 2 tablespoons olive oil in a large skillet over medium heat. Cook the black bean patties for 4-5 minutes per side, or until golden brown and heated through.
- Serve the cooked black bean patties immediately on burger buns with shredded green leaf lettuce, sliced Roma tomatoes, sliced pickles, and mayonnaise on the side. Allow everyone to assemble their own burgers with a side of crispy fries.
Notes
Patties can be made ahead and refrigerated for up to 2 days. Reheat in a skillet or oven until warmed through. The lettuce, tomatoes, and pickles can be prepped in advance.
