Ingredients
- 1 can black beans (15-ounce, rinsed and drained)
- 0.5 cup breadcrumbs
- 0.25 cup yellow onion (finely chopped)
- 1 clove garlic (minced)
- 1 teaspoon ground cumin
- 0.5 teaspoon chili powder
- 1 egg
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoon olive oil (divided)
- 1 package sweet potato fries (20-ounce, frozen)
- 4 hamburger buns
- 0.5 cup lettuce (shredded)
- 0.5 tomato (sliced)
Instructions
- Preheat your oven or air fryer to the temperature specified on the frozen sweet potato fries package (usually around 400°F). Arrange the sweet potato fries in a single layer on a baking sheet or in the air fryer basket and cook according to package directions, about 15-20 minutes, flipping halfway.
- While fries cook, mash the rinsed and drained black beans in a medium bowl until mostly smooth, but with some texture remaining.
- Add the breadcrumbs, finely chopped yellow onion, minced garlic, ground cumin, chili powder, egg, salt, and black pepper to the mashed black beans. Mix well until everything is combined.
- Form the mixture into 4 patties, about 3/4-inch thick.
- Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat. Carefully place the black bean patties in the skillet and cook for 4-6 minutes per side, or until golden brown and heated through. Add remaining 1 tablespoon olive oil if needed.
- While burgers cook, lightly toast the hamburger buns.
- Serve the black bean burgers on toasted buns with the cooked sweet potato fries and your desired toppings.
Notes
You can make the burger patties ahead of time and refrigerate them for up to 2 days before cooking. For a gluten-free option, use gluten-free breadcrumbs and buns.
