- 2 can black beans (rinsed and drained)
- 0.5 cup breadcrumbs
- 0.25 cup yellow onion (finely diced)
- 2 clove garlic (minced)
- 1 egg (large, lightly beaten)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 1 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 2 tablespoon olive oil
- 7 burger buns (soy-free)
- 7 lettuce leaves
- 7 tomato slices
- 1 package quick oven fries (frozen)
Instructions
- Preheat your oven and prepare the quick oven fries according to package directions while making the burgers.
- In a large bowl, mash the rinsed and drained black beans with a fork until mostly crushed but still some texture remains.
- Stir in the breadcrumbs, finely diced yellow onion, minced garlic, beaten egg, chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix until well combined.
- Divide the mixture into 7 equal portions and form into patties.
- Heat olive oil in a large skillet over medium heat. Carefully place the patties in the hot skillet (you may need to cook in batches). Cook for 4-5 minutes per side, until browned and heated through.
- Serve the black bean burgers on burger buns with lettuce leaves, tomato slices, and a side of quick oven fries.
Notes
For firmer burgers, you can refrigerate the patties for 30 minutes before cooking. Adjust spices to your family's preference.
