Ingredients
- 1.75 pound beef top sirloin steak (lean, sliced into thin strips)
- 2 yellow onions (large, thinly sliced into rings)
- 1 green bell pepper (large, sliced into strips)
- 1 tablespoon olive oil
- 2 tablespoon red wine vinegar
- 4 clove garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper (ground)
- 2 can canned black beans (low-sodium, rinsed and drained)
Instructions
- Season the sliced sirloin with dried oregano, half of the kosher salt, black pepper, and 2 tablespoons of red wine vinegar. Let sit for 5 minutes.
- In a small saucepan over medium heat, combine the drained black beans, minced garlic, and the remaining half of the kosher salt with 1/4 cup of water. Simmer gently for 8 minutes, mashing lightly with a spoon.
- Heat the olive oil in a large skillet over high heat. Add the sirloin strips in a single layer and sear for 3 to 4 minutes until browned and medium-rare; remove meat to a clean plate.
- Lower the skillet heat to medium and add the sliced yellow onions and green bell pepper. Sauté for 6 minutes until onions are soft and caramelized around the edges.
- Return the beef and any accumulated juices back to the skillet, tossing with the onions and peppers for 1 minute to finish.
- Portion the warm seasoned black beans onto 5 plates and top generously with the steak and smothered onions.
Notes
Thinly slicing the sirloin against the grain ensures it cooks quickly and remains very tender.
