Beef-Tomato Penne Bake

  1. Preheat your oven to 375°F. Bring a large pot of salted water to a boil and cook the gluten-free penne pasta according to package instructions until al dente (about 8 minutes), then drain.
  2. In a large skillet over medium-high heat, brown the lean ground beef for 6 to 8 minutes until fully cooked through and no longer pink (internal temperature 160°F). Drain excess fat.
  3. Stir the canned tomato sauce, Italian seasoning, garlic powder, and 3/4 teaspoon of the salt into the beef. Simmer for 3 minutes, then fold in the cooked penne.
  4. Transfer the pasta mixture to an 8x8-inch baking dish, top evenly with shredded mozzarella cheese, and bake for 12 to 15 minutes until the cheese is melted and bubbling at the edges.
  5. While the pasta bakes, steam the fresh broccoli florets in a covered saucepan with 2 tablespoons of water over medium heat for 5 minutes until crisp-tender. Toss with olive oil and the remaining 1/4 teaspoon of salt before serving alongside the pasta bake.
