  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 1/4 pounds ground beef and 1 finely diced yellow onion. Cook, breaking up the beef, until browned and onion is softened, about 5-7 minutes. Drain any excess fat.
  2. Stir in the 2 minced garlic cloves, 2 tablespoons chili powder, 1 tablespoon ground cumin, and 1/2 teaspoon smoked paprika. Cook for 1 minute until fragrant.
  3. Pour in 1/2 cup beef broth and bring to a simmer. Cook for 2-3 minutes, stirring, until the liquid has mostly absorbed and the beef is well coated. Season with salt and black pepper to taste.
  4. While the beef cooks, prepare the guacamole: Mash 3 ripe avocados in a bowl with a fork. Stir in 1/4 cup chopped fresh cilantro and 2 tablespoons lime juice. Season with salt to taste.
  5. Warm the 18 hard taco shells according to package instructions (e.g., in the oven for a few minutes or microwave). Serve the seasoned beef in the warmed taco shells with salsa, shredded lettuce, and guacamole.

Notes

To make prep even faster, you can use pre-minced garlic and pre-made guacamole, just ensure they are soy-free. Offer different toppings like fresh pico de gallo or pickled red onions.
