Ingredients
- 0.5 pound ground beef
- 0.5 yellow onion (diced)
- 1 tablespoon taco seasoning
- 1.25 cup water
- 6 corn tortillas
- 0.5 cup white rice
- 0.5 lime (juiced)
- 2 tablespoon fresh cilantro (chopped)
- 2 tablespoon sour cream
- 0.25 cup shredded lettuce
- 0.25 cup tomato (diced)
- 0.5 teaspoon olive oil
Instructions
- Heat 1/2 teaspoon olive oil in a skillet over medium-high heat. Add 0.5 diced yellow onion and cook for 3-4 minutes until softened.
- Add 1/2 pound ground beef to the skillet. Cook, breaking it apart with a spoon, until browned. Drain any excess grease.
- Stir in 1 tablespoon taco seasoning and 1/4 cup water. Bring to a simmer and cook for 5 minutes, or until the liquid has mostly evaporated and the beef is well coated.
- While beef cooks, combine 1/2 cup white rice and 1 cup water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until water is absorbed and rice is tender. Fluff with a fork.
- Stir the juice of 0.5 lime and 2 tablespoons chopped fresh cilantro into the cooked rice.
- Warm the 6 corn tortillas according to package directions (microwave or skillet).
- Serve the seasoned ground beef in warm tortillas with cilantro lime rice on the side, topped with sour cream, shredded lettuce, and diced tomato, if desired.
