  1. Heat 1/2 teaspoon olive oil in a skillet over medium-high heat. Add 0.5 diced yellow onion and cook for 3-4 minutes until softened.
  2. Add 1/2 pound ground beef to the skillet. Cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  3. Stir in 1 tablespoon taco seasoning and 1/4 cup water. Bring to a simmer and cook for 5 minutes, or until the liquid has mostly evaporated and the beef is well coated.
  4. While beef cooks, combine 1/2 cup white rice and 1 cup water in a small saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until water is absorbed and rice is tender. Fluff with a fork.
  5. Stir the juice of 0.5 lime and 2 tablespoons chopped fresh cilantro into the cooked rice.
  6. Warm the 6 corn tortillas according to package directions (microwave or skillet).
  7. Serve the seasoned ground beef in warm tortillas with cilantro lime rice on the side, topped with sour cream, shredded lettuce, and diced tomato, if desired.
