Beef Tacos

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 8-10 minutes. Drain excess fat.
  2. Add diced yellow onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic, chili powder, ground cumin, and smoked paprika. Cook for 1 minute until fragrant.
  3. Pour in beef broth, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Bring to a simmer and cook until slightly thickened, about 5-7 minutes. Set aside.
  4. While the beef is cooking, prepare the cilantro-lime rice. In a medium saucepan, combine uncooked white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Fluff with a fork, then stir in chopped fresh cilantro and the juice of 1 lime.
  5. For the avocado crema, mash ripe avocados in a bowl. Stir in sour cream, the juice of the remaining 1 lime, and a pinch of kosher salt. Mix until smooth.
  6. Warm corn tortillas according to package directions (microwave, skillet, or oven).
  7. Serve the seasoned ground beef in warm corn tortillas with cilantro-lime rice, a dollop of avocado crema, and optional hot sauce or shredded Monterey Jack cheese.

Notes

You can prep the rice and avocado crema ahead of time to make assembly even quicker.
