- 1.5 pound ground beef (80/20 lean)
- 0.5 cup water
- 2 tablespoon taco seasoning mix (low sodium preferred)
- 16 flour tortillas (small)
- 2 cup shredded lettuce (shredded)
- 1.5 cup Roma tomatoes (chopped)
- 1 cup cheddar cheese blend (shredded)
- 0.5 cup sour cream
- 0.5 cup salsa
- 1 package tortilla chips (for serving)
Instructions
- In a large skillet, cook the 1 1/2 pounds ground beef over medium-high heat, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes. Drain any excess fat.
- Stir in the 2 tablespoons taco seasoning mix and 1/2 cup water. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the liquid has mostly absorbed.
- While the beef cooks, warm the 16 small flour tortillas according to package directions (microwave, oven, or skillet). Prepare the toppings: shred the 2 cups shredded lettuce and chop the 1 1/2 cups Roma tomatoes.
- Serve the seasoned ground beef in warm flour tortillas with shredded lettuce, chopped tomatoes, 1 cup shredded cheddar cheese blend, 1/2 cup sour cream, and 1/2 cup salsa. Provide tortilla chips on the side for a complete meal.
Notes
Customize toppings with sliced avocado, pickled jalapeƱos, or chopped cilantro. Leftover taco meat reheats well and can be used for salads or quesadillas.
