Ingredients
- 1.25 pound ground beef (lean)
- 1 tablespoon olive oil
- 2 tablespoon taco seasoning (nut-free, egg-free, soy-free)
- 0.5 cup water
- 10 hard taco shells
- 4 cup shredded lettuce
- 2 Roma tomatoes (diced)
- 2 avocados (sliced or mashed)
- 0.75 cup salsa
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess grease.
- Stir in the taco seasoning and 1/2 cup of water. Bring to a simmer and cook for 3-5 minutes, stirring occasionally, until the sauce has thickened and coated the beef.
- While the beef is simmering, warm the hard taco shells according to package directions.
- Prepare your taco toppings: shred the lettuce, dice the Roma tomatoes, and slice or mash the avocados.
- Serve the seasoned ground beef in the warm taco shells with shredded lettuce, diced tomatoes, sliced avocado, and salsa.
Notes
Toppings can be prepped ahead of time for an even faster assembly at dinner. Be sure to check the taco seasoning label to ensure it is nut-free and soy-free.
