Ingredients
- 1.5 pound ground beef (90% lean)
- 1 yellow onion (chopped)
- 1 package taco seasoning
- 1 cup water
- 2 package pre-cooked brown rice
- 2 can black beans (rinsed and drained)
- 1 can whole kernel corn (drained)
- 4 cup shredded lettuce
- 1 cup salsa
- 1 cup sour cream
- 1 cup shredded cheddar cheese
Instructions
- Brown the ground beef in a large skillet over medium-high heat, breaking it apart with a spoon. Drain any excess fat.
- Add the chopped yellow onion to the skillet with the ground beef and cook for 3-4 minutes until softened.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, stirring occasionally, until the liquid has mostly evaporated and the beef is well coated.
- While the beef cooks, warm the pre-cooked brown rice, black beans, and whole kernel corn according to package directions, either in the microwave or separate saucepans.
- To assemble, spoon a base of brown rice into bowls. Top with the seasoned ground beef, black beans, corn, shredded lettuce, salsa, sour cream, and shredded cheddar cheese.
