Ingredients
- 1.5 pound ground beef
- 1 tablespoon olive oil
- 1 yellow onion (large, diced)
- 3 clove garlic (minced)
- 1 teaspoon ground cumin
- 0.5 teaspoon ground turmeric
- 1 can diced tomatoes (14.5 ounce, undrained)
- 1.5 pound collard greens (tough stems removed, chopped)
- 1 cup milk (whole or 2%)
- 3 cup water
- 1.5 cup cornmeal (fine or medium grind)
- 1 teaspoon salt (divided)
- 0.5 teaspoon black pepper
Instructions
- Heat 1 tablespoon olive oil in a large skillet or pot over medium-high heat. Add 1 1/2 pounds ground beef and cook, breaking it apart with a spoon, until browned, about 5 minutes.
- Drain any excess fat from the skillet. Add 1 large yellow onion and cook until softened, about 3 minutes. Stir in 3 cloves garlic, 1 teaspoon ground cumin, and 1/2 teaspoon ground turmeric, and cook for 1 minute more until fragrant.
- Stir in 1 (14 1/2 ounce) can diced tomatoes and 1 pound collard greens. Cook until the greens begin to wilt, about 3-5 minutes. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Reduce heat to low, cover, and let simmer gently while you prepare the ugali.
- For the ugali, bring 3 cups water and 1 cup milk to a boil in a medium saucepan. Add 1/2 teaspoon salt. Gradually add 1 1/2 cups cornmeal to the boiling liquid, whisking constantly to prevent lumps. Reduce heat to low and continue stirring vigorously with a wooden spoon for 5-7 minutes, until a stiff porridge forms and pulls away from the sides of the pot.
- Serve the quick beef sukuma wiki hot with scoops of creamy ugali.
Notes
Stir the ugali continuously to ensure it cooks evenly and doesn't stick to the pot. If the ugali is too thick, add a splash more milk or water. For extra heat, add a pinch of red pepper flakes to the beef mixture.
