Ingredients
- 1 tablespoon olive oil
- 1.5 pound beef sirloin (cut into 1-inch strips)
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper (freshly ground)
- 1 yellow onion (medium, chopped)
- 8 ounce cremini mushrooms (sliced)
- 2 clove garlic (minced)
- 2 tablespoon all-purpose flour
- 2 cup beef broth
- 1 tablespoon Dijon mustard
- 0.5 cup sour cream
- 12 ounce egg noodles
- 1 pound fresh green beans (trimmed)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season beef strips with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Sear the beef in batches until browned on all sides, about 2-3 minutes per batch. Remove beef from skillet and set aside.
- Reduce heat to medium. Add yellow onion to the skillet and cook until softened, about 5 minutes. Add cremini mushrooms and cook until tender and browned, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Sprinkle all-purpose flour over the vegetables and cook, stirring constantly, for 1 minute. Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook until slightly thickened, about 3-5 minutes. Stir in Dijon mustard.
- Return beef to the skillet. Reduce heat to low, cover, and simmer for 10 minutes to allow flavors to meld. Meanwhile, cook egg noodles according to package directions. Drain well.
- In a separate pot, steam or boil fresh green beans until tender-crisp, about 5-7 minutes. Season with remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
- Remove skillet from heat. Stir in sour cream until fully incorporated. Do not boil after adding sour cream. Serve Beef Stroganoff immediately over hot egg noodles, alongside the seasoned green beans.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently to prevent the sour cream from separating.
