Ingredients
- 1 pound sirloin steak (thinly sliced against the grain)

- 1 tablespoon avocado oil

- 0.5 pound cremini mushroom (sliced)
- 0.5 pound fresh green bean (trimmed)
- 2 tablespoon olive oil
- 2 clove garlic (minced)
- 0.25 cup scallion (chopped, for garnish)
Instructions
- In a medium bowl, combine the thinly sliced sirloin steak, 2 tablespoons tamari, 1 tablespoon avocado oil, 1 teaspoon grated fresh ginger, and 1/2 teaspoon black pepper. Toss to coat and let marinate for at least 15 minutes at room temperature.
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the sliced cremini mushrooms and cook for 5-7 minutes until softened and browned. Remove mushrooms and set aside.
- Add the remaining 1 tablespoon olive oil to the skillet. Add the trimmed fresh green beans and sauté for 5-7 minutes until tender-crisp. Add the minced garlic during the last minute of cooking. Remove green beans and garlic and set aside.
- Increase heat to high. Add the marinated beef to the hot skillet in a single layer (cook in batches if necessary to avoid overcrowding). Stir-fry for 2-3 minutes until browned and cooked to your desired doneness.
- Return the cooked mushrooms, green beans, and garlic to the skillet with the beef. Toss everything together briefly to combine and heat through.
- Serve the savory beef stir-fry immediately, garnished with chopped scallions.
Notes
Ensure your skillet is very hot when cooking the beef to get a good sear without overcooking. Cook in batches if needed to maintain high heat.
