  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Season 1 1/2 pounds beef stew meat with 1/4 teaspoon salt and 1/4 teaspoon black pepper. Add to the pot and sear on all sides until browned, about 5 minutes. Remove beef and set aside.
  2. Add 1 large yellow onion to the pot and cook until softened, about 3 minutes. Stir in 3 cloves garlic, 1 teaspoon ground coriander, 1 teaspoon curry powder, and 1/2 teaspoon ground turmeric. Cook for 1 minute until fragrant.
  3. Return the beef to the pot. Stir in 1 (14 1/2 ounce) can diced tomatoes and 2 cups beef broth. Bring to a simmer, then add 1 pound collard greens. Cover and simmer for 10-12 minutes, or until beef is tender enough for a quick meal (it will soften further as you eat) and greens are wilted. Season with 1/2 teaspoon salt.
  4. While the stew simmers, prepare the simple corn fufu. Bring 3 cups water to a boil in a separate medium saucepan. Add 1/4 teaspoon salt. Gradually whisk in 1 1/2 cups yellow cornmeal, stirring constantly to prevent lumps. Reduce heat to low and continue stirring vigorously with a wooden spoon for 5-7 minutes, until a stiff, smooth dough forms.
  5. Serve the quick beef stew hot, accompanied by generous scoops of the simple corn fufu.

Notes

For a truly tender beef stew in such a short time, choose smaller cut stew meat pieces or even thinly sliced sirloin. Using a pre-cut stew meat blend that's already tenderized can also help. If you prefer a thicker fufu, you can use slightly less water or cook for an additional minute.
