Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Add the lean ground beef and cook, breaking it up with a spoon, until browned, about 6-8 minutes. Drain any excess fat.
- Add the diced yellow onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and dried oregano, cooking for another minute until fragrant.
- Pour in the crushed tomatoes and beef broth. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat to low, cover, and let it cook gently while you prepare the potatoes, about 15 minutes.
- While the beef mixture simmers, place the peeled and cubed Russet potatoes in a large pot and cover with cold water. Bring to a boil over high heat and cook until fork-tender, about 15-20 minutes.
- Drain the cooked potatoes thoroughly. Return them to the hot pot. Add the milk, unsalted butter, and a pinch of salt. Mash with a potato masher or fork until smooth and creamy. Set aside.
- Stir the fresh spinach into the beef mixture until it wilts, which should only take 2-3 minutes. Taste and adjust seasoning if needed.
- Serve the Beef-Spinach Skillet alongside the garlic mashed potatoes. Garnish with grated Parmesan cheese, if desired.
