Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced green bell peppers and yellow onion. Sauté for 5-7 minutes until tender-crisp.
  2. Remove vegetables from the skillet and set aside. Add the remaining 1 tablespoon of olive oil to the skillet, then add the ground beef. Cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. While beef cooks, in a small bowl, combine chili powder, cumin, garlic powder, onion powder, salt, and black pepper.
  4. Stir the spice mixture into the cooked ground beef and cook for 1-2 minutes until fragrant.
  5. Return the sautéed vegetables to the skillet with the beef and stir to combine. Cook for another 2-3 minutes to heat through.
  6. Serve the sizzling beef and vegetable mixture over a bed of mixed greens, topped with sliced avocado.

Notes

Store beef and veggies separately from greens and avocado for best texture when reheating. Reheat beef mixture and serve over fresh greens.
