Ingredients
- 1 pound ground beef (80/20 lean)
- 0.5 cup yellow onion (chopped)
- 1 cup mixed frozen peas and carrots
- 2 tablespoon all-purpose flour
- 1.5 cup beef broth
- 1 teaspoon Worcestershire sauce
- 0.5 teaspoon dried thyme
- 0.75 teaspoon kosher salt
- 0.5 teaspoon black pepper
- 3 cup mashed potatoes (prepared)
- 1 tablespoon butter (melted)
- 3 cup mixed greens (with light vinaigrette)
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet or Dutch oven (or a regular skillet, then transfer), brown the 1 pound ground beef and 1/2 cup chopped yellow onion over medium-high heat. Break up the beef with a spoon. Drain any excess fat.
- Stir in 1 cup mixed frozen peas and carrots and cook for 2 minutes.
- Sprinkle 2 tablespoons all-purpose flour over the beef mixture and stir for 1 minute.
- Gradually stir in 1 1/2 cups beef broth, 1 teaspoon Worcestershire sauce, 1/2 teaspoon dried thyme, 3/4 teaspoon kosher salt, and 1/2 teaspoon black pepper. Bring to a simmer and cook for 5 minutes, or until the sauce thickens.
- If not using an oven-safe skillet, transfer the beef mixture to a 9x9 inch baking dish.
- Evenly spoon or pipe the 3 cups prepared mashed potatoes over the beef filling. Brush with 1 tablespoon melted butter.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly. If desired, you can broil for the last 2-3 minutes for extra browning.
- Let stand for 5 minutes before serving. Serve with 3 cups mixed greens with light vinaigrette on the side.
Notes
You can prepare the mashed potatoes ahead of time to save on prep on cooking day. A sprinkle of cheese on top of the potatoes before baking adds extra flavor.
