  1. Heat 3 tablespoons olive oil in a large skillet over medium-high heat. Add 1 1/2 pounds beef sausage slices and brown for 4-5 minutes, turning occasionally until nicely seared. Remove and set aside.
  2. Add 2 small chopped yellow onions and 5 minced garlic cloves to the same skillet and sauté over medium heat until soft and fragrant, about 3-4 minutes.
  3. Add 1 1/2 cups orzo pasta to the skillet and toast for 1-2 minutes until lightly golden. Pour in 3 3/4 cups chicken broth and bring to a simmer. Reduce heat to medium-low and cook, stirring occasionally, for 10-12 minutes, or until the orzo is al dente and most of the liquid has been absorbed.
  4. Stir in 3 cups broccoli florets during the last 3-4 minutes of simmering, cooking until tender-crisp.
  5. Return the browned beef sausage to the skillet. Stir in 1 1/2 tablespoons lemon juice. If desired, add 1/3 cup Parmesan cheese and mix well to combine. Season with 3/4 teaspoon salt and 1/2 teaspoon black pepper to taste. Serve hot.

Notes

Store leftovers in an airtight container for up to 4 days. Reheat gently on the stovetop or in the microwave with a splash of water or broth to loosen the orzo.
