Beef Pozole Soup

Instructions

  1. In a large pot, heat olive oil.
  2. Brown lean beef cubes.
  3. Add onion, garlic, salt, black pepper, cilantro, and enough water to cover the meat.
  4. Cover pot and cook over low heat until meat is tender.
  5. Add stewed tomatoes and tomato paste.
  6. Continue cooking for about 20 minutes.
  7. Add hominy and continue cooking another 15 minutes, stirring occasionally, over low heat.
  8. If too thick, add water for desired consistency.

Notes

Skinless, boneless chicken breasts may be used instead of beef cubes.
