- 1 pound ground beef (80/20 lean)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 pound russet potatoes (peeled and diced into 1/2-inch cubes)
- 1 teaspoon paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup beef broth
- 10 ounce cut green beans
Instructions
- Heat 1 tablespoon olive oil in a large, oven-safe skillet over medium-high heat. Add the 1 pound ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped yellow onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.
- Stir in the 1 pound diced russet potatoes, 1 teaspoon paprika, 1/2 teaspoon dried thyme, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 5-7 minutes, stirring occasionally, until potatoes start to soften slightly.
- Pour in 1 cup beef broth and bring to a simmer. Reduce heat to low, cover the skillet, and cook for 10-12 minutes, or until potatoes are tender.
- Stir in the 10 ounce package frozen cut green beans. Re-cover and cook for another 5 minutes, or until the green beans are heated through and tender-crisp.
- Serve directly from the skillet for an easy family-style meal.
Notes
For an even quicker meal, you can par-boil or microwave the diced potatoes for a few minutes before adding them to the skillet to reduce overall cooking time.
