Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground beef
- 1 yellow onion (medium, chopped)
- 2 cup diced potatoes (pre-cooked, diced)
- 1 cup frozen peas and carrots blend
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and yellow onion, breaking up the beef with a spoon. Cook until beef is browned and onion is softened, about 5-7 minutes. Drain any excess fat.
- Add pre-cooked diced potatoes, frozen peas and carrots blend, dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper to the skillet. Stir to combine.
- Continue to cook, stirring occasionally, for 8-10 minutes, or until potatoes are heated through and slightly crispy, and vegetables are tender-crisp.
- Serve the hash hot, garnished with fresh parsley if desired.
Notes
Using pre-cooked diced potatoes drastically reduces cooking time for this hearty hash. Feel free to add a fried egg on top for an extra treat.
