Ingredients
- 0.5 tablespoon olive oil
- 0.5 pound ground beef (80/20 lean)
- 0.5 yellow onion (medium, chopped)
- 1 clove garlic (minced)
- 0.5 green bell pepper (medium, chopped)
- 0.5 cup tomato sauce
- 0.5 cup beef broth
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 4 ounce egg noodles
- 0.5 cup shredded cheddar cheese
- 2 carrots (medium, peeled and sliced into rounds)
Instructions
- Preheat oven to 375°F. Toss the sliced carrots with 1/2 tablespoon olive oil, a pinch of salt, and a pinch of black pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While carrots roast, heat remaining 1/2 tablespoon olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped yellow onion, minced garlic, and chopped green bell pepper to the skillet with the beef. Cook for 5-7 minutes, until vegetables are softened.
- Stir in tomato sauce, beef broth, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer and cook for 5 minutes.
- Meanwhile, cook the wide egg noodles according to package directions until al dente. Drain well.
- Combine the cooked noodles with the beef mixture in an oven-safe casserole dish. Sprinkle with shredded cheddar cheese.
- Bake for 10-15 minutes, or until cheese is melted and bubbly. Serve one portion of the casserole with roasted carrots.
- Portion the remaining casserole and roasted carrots into a container for Friday's meal.
