  1. Preheat oven to 375°F. Toss the sliced carrots with 1/2 tablespoon olive oil, a pinch of salt, and a pinch of black pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  2. While carrots roast, heat remaining 1/2 tablespoon olive oil in a large skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Add chopped yellow onion, minced garlic, and chopped green bell pepper to the skillet with the beef. Cook for 5-7 minutes, until vegetables are softened.
  4. Stir in tomato sauce, beef broth, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer and cook for 5 minutes.
  5. Meanwhile, cook the wide egg noodles according to package directions until al dente. Drain well.
  6. Combine the cooked noodles with the beef mixture in an oven-safe casserole dish. Sprinkle with shredded cheddar cheese.
  7. Bake for 10-15 minutes, or until cheese is melted and bubbly. Serve one portion of the casserole with roasted carrots.
  8. Portion the remaining casserole and roasted carrots into a container for Friday's meal.

Notes

This casserole reheats beautifully. Store individual portions in airtight containers for up to 4 days.
