- 0.5 cucumber (thinly sliced)
- 2 tablespoon lime juice (fresh)
- 1 teaspoon salt
Instructions
- Rinse 1/2 cup jasmine rice thoroughly under cold water. Combine rice with 1 cup of water in a small saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed and rice is tender. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
- In a medium bowl, combine 1 pound sirloin steak, 1 tablespoon soy sauce, 1 teaspoon granulated sugar, 1/2 teaspoon black pepper, and 1 teaspoon cornstarch. Toss to coat well. Let marinate for at least 15 minutes at room temperature, or up to 30 minutes.
- While beef marinates, prepare the lime-pepper dipping sauce: In a small bowl, whisk together 2 tablespoons fresh lime juice, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper.
- Arrange 2 cups fresh lettuce, 1 medium tomato, and 0.5 cucumber on two serving plates.
- Heat 1 tablespoon olive oil in a large skillet or wok over high heat until shimmering. Add 2 cloves garlic and stir-fry for 15 seconds until fragrant.
- Add the marinated beef to the skillet in a single layer and cook undisturbed for 1-2 minutes until browned. Flip and stir-fry for another 1-2 minutes until cooked to your desired doneness.
- Divide the cooked beef and steamed jasmine rice between the serving plates with the salad. Serve immediately with the lime-pepper dipping sauce on the side.
Notes
For best results, slice the sirloin thinly and against the grain for maximum tenderness.
