Ingredients
- 1 tablespoon olive oil
- 1.5 pound ground beef (lean)
- 1 yellow onion (medium, sliced)
- 1 green bell pepper (sliced)
- 1 red bell pepper (sliced)
- 1.5 tablespoon chili powder
- 1 tablespoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon garlic powder
- 0.25 teaspoon onion powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 0.25 cup water
- 12 flour tortillas (small, soy-free)
- 0.5 cup shredded cheddar cheese
- 0.5 cup salsa
- 0.5 cup shredded lettuce
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess grease.
- Add the yellow onion, green bell pepper, and red bell pepper to the skillet. Cook for 3-5 minutes, stirring occasionally, until vegetables start to soften.
- Stir in the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and water. Cook for another 2-3 minutes, stirring constantly, until the spices are fragrant and the mixture is well combined.
- While the beef mixture cooks, warm the flour tortillas according to package directions (microwave or a dry skillet).
- Serve the sizzling beef and pepper mixture in warm tortillas, topped with shredded cheddar cheese, salsa, and shredded lettuce.
Notes
Ensure you select soy-free flour tortillas if adhering to a strict soy-free diet. Corn tortillas are naturally soy-free.
