  1. In a medium bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add thinly sliced flank steak and toss to coat evenly with the spice mixture.
  2. Heat olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering.
  3. Add beef in a single layer and cook for 2-3 minutes per side, until browned and cooked to your desired doneness. Remove beef from the skillet and set aside.
  4. Add thinly sliced bell peppers and yellow onion to the same skillet. Cook, stirring frequently, for 5-7 minutes, until vegetables are tender-crisp. You can add a tablespoon or two of water if the pan seems too dry.
  5. Return the cooked beef to the skillet with the vegetables. Toss briefly to combine and heat through.
  6. Serve the beef and vegetable fajita mixture in crisp butter lettuce cups. Top with low-carb salsa and guacamole as desired.

Notes

To minimize carbs, choose a salsa with no added sugar. For convenience, pre-cut fajita beef or pre-chopped veggies can be used. Fajita mix holds up well for meal prep; simply reheat and assemble with fresh lettuce and toppings.
