Ingredients
- 1.5 pound flank steak (thinly sliced against the grain)

- 1 red bell pepper (thinly sliced)
- 1 green bell pepper (thinly sliced)
- 1 yellow onion (thinly sliced)
- 2 head butter lettuce (separated into leaves)
- 1 cup low-carb salsa (for serving)
- 1 cup guacamole (for serving)
Instructions
- In a medium bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Add thinly sliced flank steak and toss to coat evenly with the spice mixture.
- Heat olive oil in a large skillet or cast-iron pan over medium-high heat until shimmering.
- Add beef in a single layer and cook for 2-3 minutes per side, until browned and cooked to your desired doneness. Remove beef from the skillet and set aside.
- Add thinly sliced bell peppers and yellow onion to the same skillet. Cook, stirring frequently, for 5-7 minutes, until vegetables are tender-crisp. You can add a tablespoon or two of water if the pan seems too dry.
- Return the cooked beef to the skillet with the vegetables. Toss briefly to combine and heat through.
- Serve the beef and vegetable fajita mixture in crisp butter lettuce cups. Top with low-carb salsa and guacamole as desired.
Notes
To minimize carbs, choose a salsa with no added sugar. For convenience, pre-cut fajita beef or pre-chopped veggies can be used. Fajita mix holds up well for meal prep; simply reheat and assemble with fresh lettuce and toppings.
