  1. First, prepare the white rice: In a medium saucepan, combine 2 cups of white rice with 4 cups of chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. While the rice cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the 2 pounds of ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add the sliced yellow onion and bell peppers to the skillet with the ground beef. Cook, stirring occasionally, for 3-5 minutes, until vegetables begin to soften.
  4. Stir in 2 tablespoons of chili powder, 1 tablespoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Cook for another 1-2 minutes, stirring to coat the beef and vegetables evenly.
  5. Stir in the 15-ounce can of rinsed and drained black beans and heat through for 1-2 minutes.
  6. To serve, divide the fluffy white rice among 8 bowls. Top each with a generous serving of the beef fajita mixture. Garnish with 1/2 cup of fresh cilantro and lime wedges.
