Ingredients
- 2 pound ground beef (80/20 lean)
- 1 tablespoon olive oil
- 1 yellow onion (large, thinly sliced)
- 2 bell peppers (thinly sliced (one red, one green))
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 cup white rice
- 4 cup chicken broth
- 15 ounce black beans (rinsed and drained)
- 0.5 cup fresh cilantro (chopped)
- 1 lime (cut into wedges)
Instructions
- First, prepare the white rice: In a medium saucepan, combine 2 cups of white rice with 4 cups of chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
- While the rice cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the 2 pounds of ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the sliced yellow onion and bell peppers to the skillet with the ground beef. Cook, stirring occasionally, for 3-5 minutes, until vegetables begin to soften.
- Stir in 2 tablespoons of chili powder, 1 tablespoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Cook for another 1-2 minutes, stirring to coat the beef and vegetables evenly.
- Stir in the 15-ounce can of rinsed and drained black beans and heat through for 1-2 minutes.
- To serve, divide the fluffy white rice among 8 bowls. Top each with a generous serving of the beef fajita mixture. Garnish with 1/2 cup of fresh cilantro and lime wedges.
