Ingredients
- 1 flour tortilla (8-inch)
- 0.5 cup cooked seasoned ground beef (from Tuesday's meal, or pre-cooked)
- 0.5 cup shredded cheese blend (Monterey Jack or cheddar)
- 1 teaspoon olive oil
- 1 ounce tortilla chips
- 2 tablespoon salsa (for serving)
- 2 tablespoon sour cream (for serving)
Instructions
- Warm the cooked seasoned ground beef in a microwave-safe bowl or small saucepan over low heat for 1-2 minutes until heated through.
- Heat olive oil in a non-stick skillet over medium heat.
- Place the flour tortilla in the hot skillet. Sprinkle half of the shredded cheese blend over one half of the tortilla. Top the cheese with the warmed seasoned ground beef, then sprinkle with the remaining shredded cheese blend.
- Fold the empty half of the tortilla over the filling, creating a crescent shape. Cook for 3-5 minutes per side, or until golden brown and the cheese is melted and bubbly.
- Remove the quesadilla from the skillet, slice into wedges, and serve immediately with tortilla chips, salsa, and sour cream.
Notes
For extra flavor, you can add a pinch of chili powder or smoked paprika to the beef before warming.
