Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add yellow onion and garlic to the skillet and cook until softened, about 3 minutes.
- Stir in chili powder, ground cumin, salt, and black pepper. Cook for 1 minute until fragrant.
- Stir in black beans and frozen corn. Cook for 2-3 minutes, until heated through.
- To assemble bowls, divide cooked white rice among four serving bowls. Top with the seasoned beef mixture.
- Garnish with salsa and fresh cilantro, if desired. Serve immediately.
