Beef-Broccoli Stir-Fry with Garlic Rice

  1. In a small bowl, whisk together 1 tablespoon cornstarch, 1 tablespoon soy sauce, 1 tablespoon brown sugar, and 1 teaspoon fresh grated ginger to make the stir-fry sauce. Set aside.
  2. Pat dry 1 pound sirloin steak slices. In another small bowl, whisk together 2 tablespoons soy sauce. Add beef and toss to coat. Marinate for 5 minutes.
  3. While beef marinates, prepare the garlic rice: Combine 1 cup quick-cooking white rice, 2 cups water, and 1 minced clove garlic in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 5-7 minutes, or until water is absorbed and rice is tender. Keep warm.
  4. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add beef in a single layer and sear for 1-2 minutes per side until browned. Do not overcrowd the pan; cook in batches if necessary. Remove beef from skillet.
  5. Add 4 cups broccoli florets and 2 minced cloves garlic to the skillet. Stir-fry for 3-5 minutes, until tender-crisp. Return beef to the skillet. Pour in the prepared stir-fry sauce and cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the beef and broccoli.
  6. Serve the beef-broccoli stir-fry immediately over the garlic rice.

Notes

Feel free to add a pinch of red pepper flakes to the sauce for extra heat if desired. Leftovers are excellent for lunch the next day and can be reheated in the microwave.
