  1. In a small bowl, whisk together low sodium soy sauce, brown sugar, rice vinegar, cornstarch, and 1/4 cup water until smooth to create the stir-fry sauce. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
  3. Add chopped yellow onion, minced garlic, and grated fresh ginger to the skillet. Cook for 2-3 minutes until fragrant.
  4. Stir in broccoli florets. Pour in the prepared stir-fry sauce and cook for 3-5 minutes, stirring constantly, until the sauce thickens and broccoli is tender-crisp.
  5. Meanwhile, cook 2 cups jasmine rice with 4 cups water according to package directions, or in a rice cooker, while preparing the stir-fry.

Notes

Ensure broccoli florets are cut small for quicker cooking. You can adjust the brown sugar to your preferred sweetness level in the sauce.
