Ingredients
- 0.5 pound sirloin steak (sirloin or flank, thinly sliced against the grain)
- 1 tablespoon olive oil
- 2 clove garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 1 head broccoli (small, cut into bite-sized florets)
- 0.25 cup low-sodium soy sauce (low sodium)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 0.5 teaspoon red pepper flakes
- 1 head cauliflower (riced)
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper
- 1 tablespoon toasted sesame seeds
Instructions
- Slice the sirloin steak very thinly against the grain. In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).
- Heat 1/2 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the beef slices and cook quickly for 2-3 minutes until browned on all sides. Remove beef from the skillet and set aside.
- Add the remaining 1/2 tablespoon olive oil to the skillet. Add the minced garlic and grated fresh ginger and stir-fry for 30 seconds until fragrant.
- Add the broccoli florets to the skillet and stir-fry for 3-5 minutes until tender-crisp. You can add a tablespoon or two of water to create steam and help them cook faster if needed.
- Return the cooked beef to the skillet. Pour the prepared sauce over the beef and broccoli, tossing to coat. Cook for 1-2 minutes until the sauce slightly thickens and coats everything.
- Meanwhile, prepare the cauliflower rice. Steam or sauté the riced cauliflower with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper until tender, about 5-7 minutes.
- Serve the beef and broccoli skillet immediately over the seasoned cauliflower rice. Garnish with toasted sesame seeds if desired.
Notes
To achieve perfectly tender beef, slice it very thin and cook quickly. Avoid overcooking the beef or it will become tough.
