Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add lean ground beef and cook, breaking it apart, until browned. Drain any excess fat and set beef aside.
  2. Add chopped yellow onion to the same skillet and cook for 3-4 minutes until softened. Stir in minced garlic and grated fresh ginger; cook for 1 minute until fragrant.
  3. Add broccoli florets to the skillet and cook for 3-5 minutes, stirring frequently, until bright green and slightly tender-crisp.
  4. In a small bowl, whisk together no-salt-added beef broth, white vinegar, garlic powder, and black pepper.
  5. Return the cooked ground beef to the skillet. Pour the broth mixture over the beef and broccoli. Bring to a gentle simmer and cook for 2-3 minutes, allowing the sauce to slightly reduce.
  6. Serve the Beef-Broccoli Medley immediately over cooked brown rice.

Notes

Ensure all ingredients are prepped and ready before you start cooking, as stir-fries cook very quickly. For extra heat, add a pinch of red pepper flakes.
