Instructions
- Heat olive oil in a large skillet or wok over medium-high heat. Add lean ground beef and cook, breaking it apart, until browned. Drain any excess fat and set beef aside.
- Add chopped yellow onion to the same skillet and cook for 3-4 minutes until softened. Stir in minced garlic and grated fresh ginger; cook for 1 minute until fragrant.
- Add broccoli florets to the skillet and cook for 3-5 minutes, stirring frequently, until bright green and slightly tender-crisp.
- In a small bowl, whisk together no-salt-added beef broth, white vinegar, garlic powder, and black pepper.
- Return the cooked ground beef to the skillet. Pour the broth mixture over the beef and broccoli. Bring to a gentle simmer and cook for 2-3 minutes, allowing the sauce to slightly reduce.
- Serve the Beef-Broccoli Medley immediately over cooked brown rice.
