  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound lean ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Stir in 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper into the beef. Cook for 1 minute more, stirring well.
  3. Push the beef to one side of the skillet. Add the 1 medium head riced cauliflower to the other side. Cook the cauliflower for 5-7 minutes, stirring occasionally, until tender-crisp. Mix the beef and cauliflower together.
  4. Remove from heat and stir in 1 1/2 tablespoons fresh lime juice and 1/2 cup chopped fresh cilantro.
  5. Divide the mixture among three bowls. Top each serving with slices of 1 medium avocado and any additional fresh cilantro if desired.

Notes

For extra crunch, consider adding a sprinkle of pumpkin seeds before serving. To save time, you can use pre-riced cauliflower.
