  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 8-10 minutes. Drain any excess grease and set the beef aside.
  2. Add the remaining 1 tablespoon olive oil to the same pot. Add the yellow onion and red bell peppers and sauté until softened, about 5-7 minutes.
  3. Stir in the zucchini and garlic, cooking for another 2 minutes until fragrant.
  4. Add the chili powder, ground cumin, smoked paprika, and dried oregano, stirring for 1 minute until aromatic.
  5. Return the cooked ground beef to the pot. Stir in the diced tomatoes (undrained), tomato paste, low-sodium beef broth, black soybeans, salt, and black pepper.
  6. Bring the chili to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes (or longer for more flavor development), stirring occasionally.
  7. Taste and adjust seasonings as needed. Serve hot, garnished with fresh cilantro and shredded cheddar cheese, if desired.
