- 0.5 pound ground beef
- 0.5 yellow onion (diced)
- 2 clove garlic (minced)
- 0.5 teaspoon dried oregano
- 0.25 teaspoon black pepper
- 14.5 ounce diced tomatoes (undrained)
- 4 ounce fresh spinach
- 0.5 cup instant couscous
- 0.75 cup water (hot)
- 1 teaspoon olive oil
- 0.5 teaspoon salt
Instructions
- Heat 1 teaspoon olive oil in a large skillet over medium-high heat. Add 0.5 diced yellow onion and cook for 3-4 minutes until softened.
- Add 1/2 pound ground beef and 2 minced garlic cloves to the skillet. Cook, breaking apart the beef, until browned. Drain any excess grease.
- Stir in 1/2 teaspoon dried oregano, 1/4 teaspoon black pepper, and 1/2 teaspoon salt. Add the 1 can diced tomatoes (undrained). Bring to a simmer.
- Stir in the 4 ounces fresh spinach. Cook for 2-3 minutes, until the spinach wilts.
- While the skillet mixture simmers, combine 1/2 cup instant couscous with 3/4 cup hot water in a bowl. Cover and let stand for 5 minutes, then fluff with a fork.
- Serve the beef and spinach mixture over the prepared couscous.
