- 1 tablespoon olive oil
- 1 pound ground beef
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 1 jar marinara sauce
- 2 cup vegetable broth
- 8 ounce rotini pasta (uncooked)
- 5 ounce fresh spinach
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
- Add yellow onion and garlic to the skillet and cook until softened, about 3 minutes.
- Stir in marinara sauce and vegetable broth. Bring to a simmer.
- Add uncooked rotini pasta, salt, and black pepper. Stir well, cover, and reduce heat to medium-low. Cook for 8-10 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
- Stir in fresh spinach and cook until wilted, about 1-2 minutes.
- Remove from heat and let stand for a few minutes before serving.
Notes
For added depth of flavor, you can stir in a tablespoon of Italian seasoning with the marinara sauce.
