  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add yellow onion and garlic to the skillet and cook until softened, about 3 minutes.
  3. Stir in marinara sauce and vegetable broth. Bring to a simmer.
  4. Add uncooked rotini pasta, salt, and black pepper. Stir well, cover, and reduce heat to medium-low. Cook for 8-10 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.
  5. Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  6. Remove from heat and let stand for a few minutes before serving.

Notes

For added depth of flavor, you can stir in a tablespoon of Italian seasoning with the marinara sauce.
