Instructions
- In a large bowl, combine lean ground beef, finely grated Russet potato (squeeze out excess moisture), finely diced yellow onion, beaten egg, gluten-free breadcrumbs, 3/4 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently until just combined; do not overmix. Form into 8 oval or round patties.
- Heat 1 tablespoon olive oil in a large non-stick skillet over medium heat. Cook patties in batches for 5-7 minutes per side, or until golden brown and cooked through. Remove patties and set aside, keeping warm.
- In the same skillet, add the remaining 1 tablespoon olive oil. Add peeled and thinly sliced carrots and cook for 2-3 minutes, stirring occasionally. Add 1 cup water or chicken broth, remaining 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until carrots are extremely soft. Mash the carrots directly in the skillet until smooth.
- Serve the beef and potato patties with the smooth, stewed carrots.
