Ingredients
- 1.25 pound sirloin steak (cut into 1-inch cubes)
- 8 ounce cremini mushrooms (halved)
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1.5 cup quinoa
- 3 cup chicken broth
- 1 yellow onion (medium, finely diced)
- 2 clove garlic (minced)
- 0.5 cup red bell pepper (chopped)
- 5 ounce fresh spinach (chopped)
- 1 can kidney beans (rinsed and drained)
Instructions
- Preheat oven to 400°F (200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a medium saucepan, combine dry quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
- While quinoa cooks, pat beef cubes dry. In a large bowl, toss beef and halved cremini mushrooms with 1 tablespoon olive oil, 1 teaspoon dried oregano, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
- Thread the beef and mushrooms alternately onto the skewers. Place skewers on a foil-lined baking sheet.
- Roast skewers in the preheated oven for 18-22 minutes for medium-rare to medium, or until desired doneness is reached, turning halfway through.
- In the fluffed quinoa, stir in the finely diced yellow onion, minced garlic, chopped red bell pepper, chopped fresh spinach, and rinsed kidney beans. Season the pilaf with a pinch of salt and pepper to taste.
- Serve the roasted beef and mushroom skewers hot alongside the quinoa pilaf.
Notes
Skewers can also be grilled for 8-12 minutes over medium-high heat, turning occasionally. The quinoa pilaf can be made ahead of time and reheated gently.
