Beef and Mushroom Skewers with Quinoa Pilaf

  1. Preheat oven to 400°F (200°C). If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium saucepan, combine dry quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  3. While quinoa cooks, pat beef cubes dry. In a large bowl, toss beef and halved cremini mushrooms with 1 tablespoon olive oil, 1 teaspoon dried oregano, 1 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until evenly coated.
  4. Thread the beef and mushrooms alternately onto the skewers. Place skewers on a foil-lined baking sheet.
  5. Roast skewers in the preheated oven for 18-22 minutes for medium-rare to medium, or until desired doneness is reached, turning halfway through.
  6. In the fluffed quinoa, stir in the finely diced yellow onion, minced garlic, chopped red bell pepper, chopped fresh spinach, and rinsed kidney beans. Season the pilaf with a pinch of salt and pepper to taste.
  7. Serve the roasted beef and mushroom skewers hot alongside the quinoa pilaf.

Notes

Skewers can also be grilled for 8-12 minutes over medium-high heat, turning occasionally. The quinoa pilaf can be made ahead of time and reheated gently.
