Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 lean)
- 0.5 yellow onion (diced)
- 1 red bell pepper (diced)
- 2 clove garlic (minced)
- 1 can whole kernel corn (drained)
- 1 package taco seasoning
- 0.25 cup water
- 8 soft taco tortillas
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup salsa
- 0.25 cup guacamole
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart with a spoon, until browned, about 5 to 7 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Drain any excess grease.
- Stir in 1/2 diced yellow onion, 1 diced red bell pepper, and 2 minced garlic cloves. Cook until the vegetables are slightly softened, about 3 to 4 minutes.
- Add 1 drained can whole kernel corn, 1 packet taco seasoning, and 1/4 cup water. Stir well to combine, then bring the mixture to a simmer and cook for 2 to 3 minutes, or until the liquid has mostly absorbed.
- While the beef mixture simmers, warm 8 soft taco tortillas according to package directions (microwave, oven, or skillet).
- Serve the sizzling beef and corn mixture in the warm tortillas with store-bought salsa and store-bought guacamole, if desired.
