  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking it apart with a spoon, until browned, about 5 to 7 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Drain any excess grease.
  2. Stir in 1/2 diced yellow onion, 1 diced red bell pepper, and 2 minced garlic cloves. Cook until the vegetables are slightly softened, about 3 to 4 minutes.
  3. Add 1 drained can whole kernel corn, 1 packet taco seasoning, and 1/4 cup water. Stir well to combine, then bring the mixture to a simmer and cook for 2 to 3 minutes, or until the liquid has mostly absorbed.
  4. While the beef mixture simmers, warm 8 soft taco tortillas according to package directions (microwave, oven, or skillet).
  5. Serve the sizzling beef and corn mixture in the warm tortillas with store-bought salsa and store-bought guacamole, if desired.
