Beef and Cheddar Quesadilla

  1. In a small skillet, brown ground beef over medium-high heat for 5-7 minutes, breaking it up with a spoon, until no longer pink. Drain any excess fat.
  2. Stir in taco seasoning and 2 tablespoons water. Simmer for 1-2 minutes until liquid has absorbed and beef is well seasoned.
  3. While beef cooks, prepare the pico de gallo: In a small bowl, combine diced Roma tomato, diced yellow onion, chopped fresh cilantro, lime juice, and a pinch of salt. Stir to combine.
  4. Heat olive oil in a separate large non-stick skillet over medium heat. Lay the large flour tortilla flat in the skillet.
  5. Sprinkle half of the shredded cheddar cheese over one half of the tortilla. Spoon the seasoned ground beef onto the same side, then top with the remaining cheddar cheese.
  6. Fold the empty half of the tortilla over the filled half. Cook for 3-5 minutes per side, until golden brown and the cheese is melted and bubbly.
  7. Remove quesadilla from skillet, slice into wedges, and serve immediately with pico de gallo and sour cream.

Notes

Using pre-made pico de gallo from the grocery store can save even more time. A leaner ground beef will reduce fat content if desired.
