Ingredients
- 1.75 pound ground beef (93/7)
- 1 tablespoon olive oil
- 1 yellow onion (large, diced)
- 4 clove garlic (minced)
- 1 green bell pepper (diced)
- 3 pound green cabbage (roughly chopped)
- 1 can diced tomatoes (14.5 ounce, undrained)
- 1 cup beef broth (low-sodium)
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned, about 7-9 minutes. Drain any excess fat.
- Add the diced yellow onion, minced garlic, and diced green bell pepper to the skillet with the beef. Cook, stirring occasionally, until the vegetables soften, about 5-7 minutes.
- Stir in the roughly chopped green cabbage, diced tomatoes (undrained), low-sodium beef broth, dried oregano, paprika, salt, and black pepper. Bring the mixture to a simmer.
- Reduce heat to medium-low, cover the skillet, and let it simmer for 15-20 minutes, or until the cabbage is tender to your liking. Stir occasionally.
- Taste and adjust seasonings as needed before serving warm. This dish reheats well for future meals.
