Beef and Cabbage Noodle Stir-Fry

  1. Cook noodles: Cook 8 ounces ramen noodles according to package directions. Drain and set aside.
  2. Brown beef: While noodles cook, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat. Remove beef from skillet and set aside.
  3. Sauté aromatics and vegetables: Add 1 thinly sliced yellow onion, 3 minced garlic cloves, and 1 tablespoon grated fresh ginger to the skillet. Stir-fry for 2-3 minutes until fragrant. Add 4 cups shredded green cabbage and 2 julienned carrots. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Make sauce and combine: In a small bowl, whisk together 1/2 cup beef broth, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon brown sugar, and 1/2 teaspoon black pepper. Return cooked beef to the skillet. Add the cooked noodles and pour the sauce over everything. Toss well to combine and heat through, about 2-3 minutes.
  5. Serve: Serve immediately.

Notes

If you don't have fresh ginger, you can substitute 1 teaspoon ground ginger. Adjust soy sauce to taste if you prefer more or less saltiness.
