Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 yellow onion (thinly sliced)
- 3 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 4 cup green cabbage (shredded)
- 2 carrots (julienned or thinly sliced)
- 0.5 cup beef broth
- 2 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon brown sugar
- 0.5 teaspoon black pepper (freshly ground)
- 8 ounce ramen noodles (flavor packet discarded)
Instructions
- Cook noodles: Cook 8 ounces ramen noodles according to package directions. Drain and set aside.
- Brown beef: While noodles cook, heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add 1 pound ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat. Remove beef from skillet and set aside.
- Sauté aromatics and vegetables: Add 1 thinly sliced yellow onion, 3 minced garlic cloves, and 1 tablespoon grated fresh ginger to the skillet. Stir-fry for 2-3 minutes until fragrant. Add 4 cups shredded green cabbage and 2 julienned carrots. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Make sauce and combine: In a small bowl, whisk together 1/2 cup beef broth, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon brown sugar, and 1/2 teaspoon black pepper. Return cooked beef to the skillet. Add the cooked noodles and pour the sauce over everything. Toss well to combine and heat through, about 2-3 minutes.
- Serve: Serve immediately.
Notes
If you don't have fresh ginger, you can substitute 1 teaspoon ground ginger. Adjust soy sauce to taste if you prefer more or less saltiness.
